I didn't post anything for recipe Friday because I got up SUPER early to take full advantage of Black Friday. I spent the afternoon sleeping and weeping because my parents had left. =( Always a sad day for me when my parents leave.
I decided that I would post a recipe today instead. I am always looking for good recipes to use up left over meat that I have cooked for a different meal. Since we always have a ton of left over turkey, I thought I'd help you use it all up. Also, it has snowed 19 inches since last week here in Coeur d'Alene so I thought that a soup would be appropriate. Enjoy!!!
Tex-Mex Turkey Soup
Serving: 6
Ingredients:
1 T. Olive Oil
1/2 C. minced onion
3 cloves garlic, minced
2 t. chili powder
1/2 t. cumin
1/2 t. oregano
4 C. water
1 can (10.75 oz) condensed tomato soup
1 can (28 oz) diced tomatoes
1 C. salsa
4 C shredded cooked turkey
1 T. parsley
3 chicken bouillon cubes
1 (14 oz) can black beans, rinsed, drained
2 C. frozen corn
1/2 C. sour cream
1/4 C. fresh cilantro
Toppings:
Corn tortilla chips
chopped green onion
shredded Monterey Jack cheese
fresh cilantro
sour cream
Directions:
1. Heat olive oil in large sauce pan over medium heat. Add minced onions cook until onions begin to soften, about 4 minutes. Add garlic, chili powder, cumin, oregano, and cook, stirring, for 1 minute.
2. Stir in water, tomato soup, diced tomatoes, salsa, shredded turkey, parsley, and bouillon cubes. Bring to a boil, then reduce heat and simmer 5 minutes or until bouillon cubes dissolve. Add black beans, corn, sour cream, and cilantro. Simmer for 20 to 30 minutes.
3. Serve with crushed tortilla chips, chopped green onion, shredded cheese, and additional cilantro and sour cream.

Saturday Morning Sleep In
This morning was a huge blessing for many reasons.
1. Gideon woke up at 4:30am and went back down until 8:30am!!!! I got so much sleep last night. It was A-mazing! I love starting the day feeling so rested.
2. It is the first morning in a very long time that Jared and I have been able to wake together and start our day together. I have been working Saturday mornings at Starbucks for the last little bit so we haven't been able to do this for a while.
3. The SUN was shinning so bright. It was wonderful to see God's light shining in our windows this morning.
4. Jared and I sat down together to enjoy some yummy Pumpkin Apple muffins and Thanksgiving Blend coffee from Starbucks. They complimented each other perfectly.
5. And to top it all off, we were able to start our day in God's word, together!

Recipe Friday!!!
For those of you reading who don't already know this, I love love love to cook and bake. So much so that when Jared and I got married our officiator asked us to come up with 5 things we loved about the other person. One of the things that Jared said he loved about me was my "culinary prowess." In my opinion, anything would have been better than his bachelor meals that consisted of ramen, fettucini alfredo out of a box, or subway. But thats not the point. The point is that I have decided to post recipes every Friday. I know that I am always searching for great dinner ideas or some appetizer to take the a friends party, of just a yummy dessert to eat. I have started compiling a bunch of yummy things I have made recently. I will be sure to post a range of options.
This week's recipe is Cafe Rio Burritos. I got this from a blog I follow called Fabulessly Frugal. I will give you the link to the recipe at the bottom, but this is to the blog. (Check it out! They have great tips for any fellow couponers!!!) I will only be following the recipe for the meat and rice only. Then creating my own burritos. I made these a couple weeks back and they are D-lish. I will be making them in the crock pot today as well. My mouth is watering as I am thinking of how good they are!! YUMMMM...
Cafe Rio Burritos
For the Meat-
3 lb pork roast - I bought a boneless shoulder roast
1 cup Salsa of your choice
1 cup brown sugar
1 can or 16 oz Dr. Pepper
1 teaspoon ground mustard
1 teaspoon garlic
Salt and pepper
Place pork roast in crock pot first. Then add the other ingredients. Cook in crock pot on low for 6-8 hours. Shred the meat with about 1 hour of cooking left.
For the Rice-
3 cups uncooked rice
3 cups water
2 teaspoons chicken bouillon
1/2 cup cilantro, chopped
1 can diced chilies
2 cloves garlic, minced
1/4 onion, chopped
Bring water for rice to a boil, add rice and all other ingredients. Cook as directed on rice package.
After meat and rice are ready, warm tortilla. Add meat and rice to tortilla. We are adding warmed black beans, guacamole, cheese, and sour cream to ours.
**Original recipe has you put beans of your choice in with rice and meat. Then place in a baking dish, cover with enchilada sauce and cheese. Place under broiler until cheese is melted.**
(We didn't love it this way. The enchilada sauce takes away from the flavor of the rice and meat.)

Be my EVERYTHING!
Today has just been one of those days. I feel restless, stressed, and am having a hard time trusting. In turn, I am being reminded that I am being disobedient and relying on myself. This always hits me right between the eyes. I know I will look back on this season and know that hindsight is always 20/20. God will be there in his "God-fashion" with that "I told you so. You should have just trusted me." Even as I type this and am aware of what is going on in my heart, its so much easier said than done. My flesh has gotten the best of me today and I'm struggling to get back to trusting the Lord.
So for the rest of the day I will be meditating on Proverbs 5:3-8:
Let not steadfast love and faithfulness forsake you;
bind them around your neck;
write them on the tablet of your heart.
So you will find favor and good success
in the sight of God and man.
Trust in the LORD with all your heart,
and do not lean on your own understanding.
In all your ways acknowledge him,
and he will make straight your paths.
Be not wise in your own eyes;
fear the LORD, and turn away from evil.
It will be healing to your flesh
and refreshment to your bones.
And letting the Love of God be my EVERYTHING.

Stressful week
I am sitting down this morning to enjoy a freshly brewed cup of french press coffee with homemade whipped cream and start reading my Bible, when clear across the room I hear Gideon "shart". This may be a little graphic but seriously I probably could have heard it outside. It was loud and juicy. Little man had a really rough week last week. He went through a huge development, which I will get to in a minute. He also spent most of the weekend fussy and not able to go poo. I felt so sorry for the little guy. He would just scream out in pain and then tighten up his belly. I gave him gas relief to try to break it up, I tried massaging his belly, I tried everything I could, but nothing would help. Thankfully this morning he was able to get some relief. phew! I hope we off to a better start this week. So after a bath and starting a load of laundry I was able to sit down and read and enjoy my yummy coffee, it was a tad cold but I guess thats life.
I mentioned that last week was a huge week for Gideon. Starting last friday Gideon had been getting up every 2 hours at night wanting to eat. It was horrible for me. I got absolutely no sleep. Add on top of that I got pretty sick. Boo! I wasn't sure what was going on with him and why he was getting up so frequently. I asked some of my mommy friends and some suggested a growth spurt. He hasn't gained any weight but.... He ROLLED OVER!!! He has not mastered the skill yet but he is getting better. It is so funny to watch him trying so hard. He grunts and pushes himself so hard. Gid also started putting his coos together and it sounds like he is singing!! It is so cute, especially at night when he is tired and he sings to himself.
We are loving every moment of this stage even though it's been a little stressful or tiring. God just keeps impressing upon my heart that we will only have one child once. Gideon is our first baby and everything we are experiencing is new. We have to enjoy it and soak it in. Take the good with the bad and make the best of each stage. All it takes for me is to look into his sweet innocent eyes or see him smile back at me or giggle when I tickle him to put it all into perspective for me. He brings me so much joy and love that I have never experienced before. Thank you God for such an amazing little boy! You are great! You are worthy!
Big news for Jared and I too.. we bought a new car last week. It just added onto the stress of an already stressful week for the both of us. Although it was a great move for us. We are super excited about it. It is a 2000 Subaru Outback. I will post pictures later today after I go pick it up in Spokane. I am excited to have something a little more roomy and more safe and comfortable for Gideon and I to be in this winter. They say its going to be a nasty one. Thankfully we have all wheel drive now!!!

She's the best kind of friend there is.
I have to say that I have been feeling incredibly blessed lately. Something that I prayed for for MONTHS and maybe even a year, was a friend. Not just any ol' friend either. I prayed for a best friend. I prayed for God to bring someone into my life that we be there for the long haul, someone who would share in life's ups and downs and all of the different seasons. Someone I could count on for anything. I wanted someone in my life who valued authenticity and "realness" as much as I do. I have had great friends in my life, and some even best friends. But there was a longing in my heart to "know someone and be known by someone." God is always so faithful. I can honestly say that I have that person in my life.
Kedron has been an amazing blessing. We have walked through some of the hardest time and some of the greatest times. God never ceases to amaze me. I have learned and grown in so many ways through the blessing that she has been in my life. God has taught me so much about Himself through our friendship.
I am so excited too for this season of life we are walking through right now. Keje had her baby!! Yay. And better yet it was a BOY!!! Now Giddy can have a best friend too. And even better yet is that he was born on my birthday!!! It was such a sweet day. It is so fun being able to have someone to call and share stories and big accomplishments with. I am excited for the journey ahead of us as we navigate this thing called mommyhood. I know that God has great plans awaiting us!!! But I think we better buckle up because it could be a little crazy!
Kedron: I never though I would ever have a friendship like the one we have. All praise and glory be to God!!! Thank you so much for being such an amazing friend. Thank you for allowing God to work in your heart and for displaying His love so easily. You inspire me to be a better friend, wife, mom, and believer every day. Thank you for the time you have taken the last 3 months to care for and love my baby boy. I am so excited to see you with Easton. I know that you are going to be a great mommy.
